Butter Chicken with Basmati Rice and Naan

Time – 25 min (5 min Prep, 20 min cook time)
Ingredients
Rice – 3 Cups (237ml x 3)
Water – 4 Cups (237ml x 4)
Coconut Oil – 2 Tbsp
Chicken Breast – 2lbs (907g)
Butter Chicken Spice Packet – 1 packet
Naan Bread – 1 package
Heavy Cream – 1 Pint (16 Fl Oz) 473 mL
Butter – Optional 1/4 stick
Salt – To Taste
Pepper – To Taste
Steps
- Cut Chicken Breast into 1 inch chunks
- Cook rice in rice cooker
- Season Chicken Breast lightly with Salt and Pepper
- Heat Coconut Oil in Pan/ Pot on med/high until shimmering
- Add chicken to pan and cook through (10-15 mins)
- Once chicken is cooked through add the butter chicken spice packet and stir to coat evenly
- Once chicken is coated slowly pour the half quart in and mix thoroughly
- Let simmer for 5-10 mins on med/low until mixture begins to darken from pale orange to a darker orange color and consistency is thicker.
- Serve with Toasted Naan and Fluffed Rice
