Easy, Cheap and Tasty Butter Chicken Recipe

Butter Chicken with Basmati Rice and Naan

Servings – 5

Time – 25 min (5 min Prep, 20 min cook time)

Ingredients

Rice – 3 Cups (237ml x 3)

Water –  4 Cups (237ml x 4)

Coconut Oil – 2 Tbsp

Chicken Breast – 2lbs (907g)

Butter Chicken Spice Packet – 1 packet

Naan Bread – 1 package 

Heavy Cream – 1 Pint (16 Fl Oz) 473 mL

Butter – Optional 1/4 stick

Salt – To Taste

Pepper – To Taste

Steps

  1. Cut Chicken Breast into 1 inch chunks
  2. Cook rice in rice cooker 
  3. Season Chicken Breast lightly with Salt and Pepper 
  4. Heat Coconut Oil in Pan/ Pot on med/high until shimmering
  5. Add chicken to pan and cook through (10-15 mins)
  6. Once chicken is cooked through add the butter chicken spice packet and stir to coat evenly
  7. Once chicken is coated slowly pour the half quart in and mix thoroughly
  8. Let simmer for 5-10 mins on med/low until mixture begins to darken from pale orange to a darker orange color and consistency is thicker.
  9. Serve with Toasted Naan and Fluffed Rice
